Chef Tom’s Morning Bowl and Swinging Sven
What better way to start your day than a healthy breakfast bowl and some Electro Swing dancing?
Healthy Breakfast Bowl
Healthy Breakfast Bowl
Serves 4
Ingredients:
4 large eggs
½ cup pine nuts
4 cups cooked quinoa
2 avocados
1/2 cup good pesto
8 pieces cooked bacon
1 pint large cherry tomatoes
1/2 tablespoon garlic, minced
½ tablespoon rosemary, minced
2 tablespoons olive oil
Salt + pepper to taste
sesame seeds
clover sprouts (or parsley)
Directions:
Preheat the oven to 400 degrees.
Cook the quinoa according to directions (I cooked mine in chicken bone broth).
Toast the pine nuts in a small dry skillet, over med-low heat, shaking from time to time until just starting to brown.
Toss the tomatoes with olive oil, garlic, rosemary, and salt and pepper. Broil about 4-6 inches away from the heat for 3-5 minutes, or until the begin to blister. A little black is a good thing.
Fry the eggs in olive oil with salt and pepper, sunnyside up to your preferred doneness
Slip the pieces of cooked bacon in with the tomatoes for the last minute or so to warm the bacon.
For each bowl, in layers:
1 cup cooked quinoa
1/2 of an avocado thinly sliced
1 tablespoon of pesto
¼ of the roasted tomatoes
2 slices of bacon
¼ of the toasted pine nuts
sesame seeds and clover sprouts as garnish (or chopped parsley)
